摘要
对云南昆明松花坝野生地木耳与陕西秦岭地区人工栽培地木耳的基本营养成分(水分、灰分、蛋白质、还原糖、脂肪、总糖、VC、氨基酸和矿物质)、生物活性成分(多酚、多糖、皂苷、黄酮)进行对比分析。结果表明,云南昆明松花坝野生地木耳蛋白质、还原糖、VC、总氨基酸、粗多糖、总皂苷、总黄酮含量高,分别为17.45 g/100 g、12.11 mg/g、81.37 mg/100 g、22.25%、179.91 mg/g,43.87 mg/g,6.51 mg/g;陕西秦岭人工栽培地木耳灰分、矿物质含量较高,灰分含量为23.84g/100g;野生地木耳和人工栽培地木耳水分、粗脂肪、总糖、总多酚含量差异不显著。
The basic nutritional and bioactive components of Nostoc commune vauch were compared and analyzed.which is grow naturally in Yunnan Songhua Dam and cultivated in Shaanxi Qinling Mountains area. Thebasic nutrients included moisture, ash, protein, fat, reducing sugar, total sugar, vitamin C, amino acids and minerals. The bioactive components included polyphenol, polysaccharide, saponin and flavonoid. The results showedthat: the protein, reducing sugar, vitamin C, total amino acid, polyphenol, polysaccharide and saponin content of Songhua Dam-Nostoc commune vauch were the higher they were 17.45 g/100g, 12.11 mg/g, 81.37 mg/100g,22.25 %, 179.91 mg/g, 43.87 mg/g and 6,51 mg/g. The ash and mineral content of Qinling-Nostoc commune vauch were the higher. The ash content was 23.84 g/100 g; water, the crude fat, total sugar and total polyphenolcontent of two species of Nostoc commune vauch had no significant difference.
