摘要
不溶性葡聚糖是一类不溶于水或碱溶液的葡萄糖多聚物,主要由微生物产生的葡萄糖基转移酶催化蔗糖合成而来,其主链通常由葡萄糖以α-(1,3)、α-(1,6)、β-(1,3)或β-(1,4)糖苷键键合而成。本文从来源、功能与应用、调控的角度总结了不溶性葡聚糖的研究进展,并对其发展趋势进行了展望。
Insoluble glucan, a typical glucose polymer with or-( 1,3)-, a-( 1,6)-, β-( 1,3)- or β-( 1,4)- glycosidic linkage in the backbone, is insoluble in water or alkali solution and mainly biosynthesized by micro-bial glucosyltransferase catalysing sucrose as the substrate. In this article, the progress in the research and development of insoluble glucan resource, functionality, application and regulation was reviewed and the futureperspective is also predicted.
