摘要
茶色素是一种安全优质的天然色素,具有一定的保健功效。目前,茶色素的提取主要通过有机溶剂浸提和体外氧化进行。对茶色素的生物活性和提取技术进行了梳理总结。
Tea pigment is safe natural and full of function.At present, the main means for preparing tea pigment as follows ： solvent extraction and preparation with oxidation in vitro.In this article, biological activities and preparation technologies of tea pigment were discussed.
