摘要
跨国饮食文化是文化地理学的重要内容,原真性是地方文化核心要素。基于原真性重塑,采用结构式访谈、深度访谈和亲身体验相结合的方法,以广州大头虾越式风味餐厅为例,从饮食、环境、服务,氛围4个核心的原真性要素,揭示饮食文化在跨国交流过程中的表征和机制,对跨国饮食文化发展和市场开发提出相关建议。
Transnational food culture is the important content of cultural geography, and authenticity is the core element of local culture. Based on restructured authenticity, the article combining structured interview, in-depth interview, with first-hand experience. Taking an example of The Tiger Prawn Vietnamese Restaurant in GuangZhou, it reveals the characterization and mechanism of food culture in the process of international communication from diet, environment, service and atmosphere these four core authenticity elements and puts forward rele vant suggestions towards the development of transnational food culture and market.
