摘要
为延长猴头菇的保鲜期,利用^(60)Co-γ射线对采后不同时期的猴头菇进行辐照处理,观察外观品质变化的同时,结合失重率、褐变度和呼吸强度等生化数据的测试,确认^(60)Co-γ射线辐照处理能够有效延长猴头菇的保鲜期,在20℃以上的环境温度下可比对照延长2~5d。适宜剂量的辐照能够有效延缓猴头菇的褐变和延缓呼吸高峰的出现,从而达到保鲜的目的。本实验中480Gy和750Gy剂量的辐照保鲜效果较佳,但过高剂量的辐照会加速猴头菇的腐烂,深入研究此项技术具有良好的应用前景。
By 60^Co- γ ray,hericium erinaceus of different stages after picking were processed to prolong the preservation period. The changes of appearance,as well as the data of weight loss ratio,browning degree and respiration intensity confirm the irradiation process can effectively enhance the preservation period about 2- 5 days than the control group at above 20℃. The proper dose irradiation can postpone the browning degree and respiration peak. In this experiment,the results suggest that 480 Gy and 750 Gy reached the best effect and overdose irradiation will accelerate the rotting process.An in-depth investigation of this technique is valuable.
