摘要 将鲜酿酒酵母泥按不同的接种量接入糖蜜培养基进行发酵,研究表明随着接种量的增大,酵母增殖系数减少、发酵周期缩短、发酵率略微降低。经数据统计分析发现在一定范围内,初始细胞数和最终细胞数的平均值与发酵周期的乘积K为常量,表明基于高密度细胞的糖蜜快速发酵酒精技术是一项可行并且十分有前景的技术。 Various quantities of fresh yeast cells were inoculated in molasses medium to ferment alcohol. The results suggested that with inoculum concentration increasing, the cell proliferation rate, fermentation period and distillation yield decreased. Further analysis showed the product of fermentation period and mean cell numbers which were calculated by initial cell numbers and final cell numbers was constant within limits, which indicated that the rapid fermentation technology based on high cell concentration was feasible and promising.
