摘要
抗性淀粉具有良好的保健功能和食品应用价值,已受到广大研究人员的青睐。阐述抗性淀粉的定义、分类、理化性质及产业研究进展,展望了抗性淀粉的研究前景,以期为我国富含抗性淀粉产业发展提供参考。
Resistant starch has attracted more and more attentions for its important physiological functions and values in food industry. The definition,classification,physical and chemical properties of resistant starch are briefly introduced,and the industry research of resistant starch is reviewed. This paper also looks forward to the prospects of resistant starch. In order to provide some references for food industry rich in resistant starch.
