摘要
通过简要介绍冰温贮藏技术的基本原理及技术特点,综述该技术在羊肉贮藏保鲜中的研究进展和应用现状,阐述羊肉冰温贮藏保鲜技术的发展趋势。
The basic principles and advantages of ice-temperature technique are introduced in this paper. The application and development of this technology in storage of mutton are reviewed. There could be much room for development of mutton icetemperature storage technology in the future.
