摘要
目的测定广东湛江海域16种野生鲹科鱼肌肉中脂肪酸含量。方法用0.5%硫酸-甲醇溶液将鱼肌肉组织中脂肪酸甲酯化,气相色谱法测定脂肪酸甲酯含量。结果 16种鲹科鱼肌肉中饱和脂肪酸、单不饱和脂肪酸、多不饱和脂肪酸含量分别为39.59%~55.45%、9.45%~37.27%、20.35%~47.89%。结论湛江海域16种鲹科鱼类中多不饱和脂肪酸含量较高,具有较好的营养价值和开发利用价值。
Objective To determine the contents of fatty acids in the muscle of 16 fishes of the family Carangidae in Zhanjiang waters. Methods The methyl esterifieation of fatty acids in the muscle was prepared by 0.5% sulfuric acid/ methanol solution and determined by gas chromatography. Results Levels of saturated, monounsaturated and polyunsaturated fatty acids in the muscle of 16 Carangidae fishes were 39.59%-55.45%, 9.45%-37.27%, and 20.35%-47.89%, respectively. Conclusion The polyunsaturated fatty acids in the muscle of 16 Carangidae fishes are plentiful in Zhanjiang waters, suggesting of good nutritional and exploitative value.
