摘要
对酵素的本质和功能进行了归纳,对食用型酵素产品的安全性及保健功能进行了综述,对国内外的酵素产品进行了比较,为我国酵素业的发展提出了建议,期望为食用型酵素产品的研究与发展提供参考。
The nature and function of enzyme was summarized , safety and health care function of edible enzyme products were reviewed .Enzyme products at home and abroad were compared , suggestions for enzyme industry development in China were proposed , in order to provide reference for research and development of edible enzyme products .
