摘要
通过应用定量描述方法对3种食醋的滋味进行分析研究,结果表明:此法能有效区别3种食醋滋味的6个感官特性强度,能够评判食醋滋味的感官质量,可以指导食醋的工艺优化与质量控制。
The taste of three kinds of vinegar is studied according to quantitative descriptive analysis (QDA)method.The results show that this method could distinguish six sensory characteristics of taste of three kinds of vinegar, evaluate the sensory quality of vinegar taste and guide the technological optimization and quality control of vinegar.
