摘要
薏仁作为一种富含蛋白质、脂肪等营养成分的谷类作物,在我国部分省市均有种植,有研究表明,薏仁中所含有的多种有效成分具有一定的抗癌、抗肿瘤作用。我国传统医学认为将薏仁作为滋补身体的优良食材,其具有消炎阵痛、补脾祛湿、利水消肿等功效。在现代食品行业中,薏仁多被作为饮料及保健酒的酿制原料进行研究及开发,对薏仁的成分及深加工应用作了简要的概述,为薏仁的开发起一定的参考作用。(晓文)
Coixseed contains rich proteins and fats and it is planted in some provinces in China. Previous research suggests that coixseed has certain anti-cancer functions. In traditional Chinese medicine, coixseed is well known for its tonic effects and it has the functions of reducing in-flammation, invigorating spleen, and alleviating edema etc. In modern food industry, coixseed is used as raw material in the production of bev-erage and healthcare wine. In this paper, the composition of coixseed and its deep processing were summed up, which provided useful reference for the development of coixseed.
