摘要 收集我国小麦主产区大型面粉企业2014年度12种小麦胚芽样品,在基本营养和安全品质分析基础上,采用ICP-MS对样品矿物元素进行对比分析,旨在为我国大宗小麦胚芽资源高值化利用提供参考。结果表明:样品总淀粉、粗脂肪、粗蛋白、灰分平均质量分数分别为17.69%、9.99%、32.94%和5.00%,变异系数依次降低;麦胚中含有丰富的矿物元素,必需常量和微量元素中含量变化最大的是Na元素和Se元素,变异系数分别达到70.16%和108.53%;主成分分析表明Mg、Fe、Cu、Se、Co是麦胚必需矿物元素的特征元素。根据食品中污染物限量标准,所有样品有毒矿物元素中As和Pb均在限量范围,但50%样品Cd超标,对其开发利用产生不利影响。 Twelve wheat germ samples were collected from the enterprises of major wheat - producing region of China in 2014. Comparative analysis was performed for mineral elements of samples using ICM - MS method based on basic nutrition and safety quality analysis. The purpose was to provide a reference for the high value use of wheat germ resources in China. The results showed that the average content of total starch, crude fat, crude protein and ash were 17.69%, 9.99%, 32.94% and 5% respectively, and the coefficient of variation was decreased gradually. Wheat germ was rich in mineral elements, and the amplitude of Na and Se content was the highest among required constant mineral elements and essential trace mineral elements, with their coefficients of variation up to 70.16% and 108.53% respectively. The principal component analysis indicated that Mg, Fe, Cu, Se and Co were the character- istic elements in necessary mineral elements in wheat germ. According to the limit standard of contaminants in food, As and Pb were all in the limited range, but Cd was exceeded the standard limit for half of the samples, which might have a negative effect on its use.
