城镇居民动物产品消费特征和膳食营养贡献 被引量:4

摘要 随着我国居民经济收入的普遍提高和物流科技的快速发展,动物产品的消费水平和可获得性都有了明显提高。据统计,2013年我国主要动物产品人均消费量(除奶类以外)与国务院印发的《2014—2020中国食物与营养发展纲要》提出的人均推荐消费量相比均高出很多,这是否意味着我国居民食物消费已完全达到营养要求?本文采用2013年我国居民动物产品消费的微观调查数据,从城乡、不同收入组及典型地区等不同层面分别总结我国城镇居民动物产品消费特征,并参照《中国居民膳食指南》分析动物产品的营养价值,评价其在城镇居民膳食营养中的贡献,发现城镇居民膳食普遍存在高热量、高脂肪,低钙、低铁,蛋白质摄入结构不合理等突出营养问题。 The animal products consumption characteristics of urban residents analyzing is to judge the trend of animal products consumption in the future, and it is also viewed as an important reference value for public nutritional problems. With the increasing income of residents in the general standard and the rapid development of logistics technology in China, the consumption level and the availability of animal products are both significantly increased. According to statistics, for urban population in 2013, the major animal products (besides milk and dairy products), consumption was much higher than the recommendation standard of 〈The development of Chinese food and nutrition program,2014-2020〉, which was published by the State Council of the People's Republic of China. Does that mean our country residents" food consumption has completely meet the nutritional requirements?This paper adopts the microscopic investigation data of China's residents" consumption of animal products in 2013, summarizing the characteristics of China's urban residents consumption of animal products from the urban and rural areas, different income groups and typical regions, respectively. Furthermore, with references to the 〈Chinese's dietary guidelines, 2016〉, the nutrition value of animal products is analyzed, and then their contribution in the urban residents diet is also pointed out. The major problem is particularly in high calorie and fat intake, but low calcium and iron intake for Chinese urban residents daily diet. Additionally, unreasonable structure of protein intake is also an outstanding nutritional problems.
