产转谷氨酰胺酶茂源链霉菌的诱变育种及发酵培养基优化 被引量:1

Mutation Breeding and Fermentation Medium Optimization of Transglutaminase Production of Streptoverticillium mobaraense

摘要 研究了茂源链霉菌在不同条件下的产转谷氨酰胺酶特性。结果表明:茂源链霉菌的最适产酶温度为32℃,最适pH为7.5。通过紫外诱变茂源链霉菌的转谷氨酰胺酶产量提高了36.8%。茂源链霉菌可利用还原性淀粉作为发酵碳源,将淀粉转化为葡萄糖,葡萄糖的液相色谱图出峰时间为6.9 min。采用玉米秸秆作为发酵产转谷氨酰胺酶的碳源,产量虽不及高氏1号培养基,但转谷氨酰胺酶的产量较为理想。 The characteristics of transglutaminase production of Streptoverticillium mobaraense under different conditions were studied. The results showed that the optimum enzyme production tempera- ture was 32℃, and the optimum pH was 7.5. Through ultraviolet mutagenesis, the transglutaminase production of Streptoverticillium mobaraense increased by 36. 8%. Reducing starch was used as car- bon source for fermentation by Streptoverticillium mobaraense, the starch was converted into glucose and glucose liquid chromatogram peak time was 6. 9 rain. Corn straw was used as carbon source for fermentation, and the transglutaminase production was ideal although it was less than that of Gao No. 1 medium, so it could be applied in the field of fermentation in further research.
