摘要 以油菜籽原料为研究对象,考察了气温变化、不同浓度CO_2气体室温密闭贮藏技术对油菜籽酸价和过氧化值的影响。实验结果表明:油菜籽的酸价受外界因素影响较小,而其过氧化值随着贮藏时间的延长而逐渐增大,且CO_2浓度越高,油菜籽的贮藏效果就要好。因此,采用100%CO_2气体密闭室温贮藏技术在一定程度上可抑制油菜籽的氧化酸败并延长其贮藏期。 The results showed that the acid values and peroxide values of all samples were in the safe range. The acid values and peroxide values of rapeseed processed by gas atmosphere packaging were lower than that of the control samples. Acid value of rapeseed was less affected by the outside factors and the peroxide value went up with the stor- age time increasing. The higher concentration of carbon dioxide, the lower the peroxide value is. The conclusion is that 100% carbon dioxide airtight room temperature storage technology can inhibit the oxidative rancidity of rapeseed and prolong the storage period.
