摘要 来自南极假丝酵母(Candida antarctica)产的脂肪酶A(CALA)作为一种生物催化剂,已广泛应用食品、医药、化妆品等领域,具有热稳定性、对映体选择性强、反式脂肪酸的选择性等特性。文中就该酶的分子结构、克隆表达、催化特性及其特性应用进行综述,旨在能发现该酶的新用途和新特性。 Lipase A from Candida antarctica (CALA) is one of a useful biocatalyst with many application that have been described in the fields of food, medicine, cosmetic industry etc. This enzyme has some unique features, such as high thermostability, strong enatioselectivity, and selectivity towards trans-fatty acids, etc. In the present re- view, the molecular structure, gene (CALA) clone and expression, the properties and applications of CALA were briefly described and discussed to point out some new applications and novelty characteristics of this biocatalyst.
