摘要
主要介绍冷冻罗非鱼骨架鱼糜的生产流程,重点阐述了原料处理、采肉、漂洗等具体工艺,并对罗非鱼骨架鱼糜的生产产品标准提供借鉴,为罗非鱼的附加价值提高提供了新的方式。
The production process ofthe frozen tilapia skeleton surimi was mainly introduced. The specific processes, including the raw material treatment, meat separation andrinsing and so on, were em- phatically introduced. It provided a reference forthe production standards of tilapia skeleton surimi and also provided a new way for increasing the additional value of tilapia.
