摘要
为了探究油菜花粉、玉米花粉、荷花花粉、茶花花粉四种不同花粉的营养成分,更好地发挥其营养价值,试验采用标准方法分别测定分析了花粉样本中的氨基酸、脂肪酸和矿物质含量。结果表明:四种不同的花粉均含有18种氨基酸,氨基酸总量占花粉总量的为16.23%~24.73%;四种花粉中必需氨基酸(EAA)含量丰富,必需氨基酸与该花粉氨基酸总量(TAA)之比的范围为39.00%~46.48%,说明氨基酸组成合理。不同花粉样本中的脂肪酸种类和含量差别较大,多不饱脂肪酸(PUFA)与饱和脂肪酸(SFA)相对含量的比值(PUFA/SFA)范围为0.96~1.77,以茶花花粉和油菜花粉较高(1.77);10种矿物质的含量均随蜂花粉品种不同而存在差异。
To explore the nutritional components of four different bee pollens, including rape pollen, corn pollen, lotus pollen, and camellia pollen for better developing their nutritional values, the contents of amino acids, fatty acids and minerals in the pollen samples were determined using the standard methods in the test. The results showed that 18 kinds of amino acids were detected from four different bee pollen samples;the total amount of amino acids accounted for 16.23% to 24.73% of that of the pollens. Four kinds of pollens were rich in essential amino acids (EAA), which occupied the total amino acids (TAA) by 39.00% to 46.48 %, indicating that the amino acid composition was reasonable. There were great differences in the types and contents of fatty acids in different pollen samples, and the ratio of unsaturated fatty acids (PUFA) to saturated fatty acids (SFA) (PUFA/SFA) ranged from 0.96 to 1.77, and camellia pollen and rape pollen had the highest value (PUFA/ SFA = 1.77 ) . The collected samples also contained 10 kinds of mineral elements, and their contents were different due to different types of bee pollens.
