摘要 对无麸质食品的概念、营养及其对社会、个人所产生的具体影响进行了论述,介绍了国外无麸质食品的相关研究成果,并分析了其发展现状和发展趋势,对我国无麸质食品的管理及发展有着重要借鉴与参考价值。 The paper discusses the concept, nutrition value, social and individual influences of gluten-free food. Moreover, gluten-free food relative research results are introduced and its current situations are analyzed,which is crucial to management and development of gluten-free food in our country in the case of experience ref-erences.
