德钦中蜂百花蜜的理化指标及挥发性成分分析 被引量:2

摘要 国内外关于单花蜜的研究报道很多,然而对于百花蜜的研究报道并不多见。本研究以德钦中蜂百花蜜为主要研究对象,参照国家相关标准的方法测定理化指标,采用固相微萃取-气相色谱-质谱联用法对其挥发性成分的种类和含量进行分析。结果表明:5个中蜂百花蜜样的10个理化指标检测值均符合我国蜂蜜标准GB18796-2005的要求;通过对5个蜜样的离子图谱进行检索分析,共确定130种化合物,5个蜜样虽为同一时段同一地区采集,但其挥发性成分存在较大差异;并发现异辛酸在德钦百花蜜中为主要挥发性成分,间乙酰氨基苯酚可能为德钦百花蜜的特有挥发成分。本研究旨在评价德钦中蜂百花蜂蜜的质量和营养价值以及为百花蜂蜜的研究提供真实的科学依据,为当地蜂产品的开发提供一定的帮助。 In spite of lots of research about monofloral honry at home and abroad, the reports on multifloral honey are seldom.The study assessed multifloral honey of Apis cerana cerana grown in Deqin and determinated the physical and chemical indicators base on interrelated national standards. Afterward, the volatile components of this honey were analyzed with solid phase microextraction coupled with gas chromatography-mass spectrometry (SPME-GC-MS). The re- suits showed that the ten physical and chemical indicators of five kinds of muhifloral honey eonsistented with national standards (GB 18796-2005).We identified 130 chemical compounds by searching and analyzing the Ion spectrum from the five kinds of muhifloral honey. Although the five honey samples were gathered in the same time in the same area, there was great difference in volatile components of these honey samples. And found that the main volatile components was 2-ethyl-hexanoic acid in the muhifloral honey of Apis cerana cerana grown in Deqin. Moreover, metacetamol might be the specific volatile components in this honey. This paper is aimed to evaluate the quality and nutritional value of muhifloral honey of Apis cerana cerana grown in Deqin , and provide some scientific basis for further studies on multi- floral flowers honey. This would be helpful for the development of local bee products.
