摘要
研究以鲢鱼加工副产物鱼皮为原料制备明胶,分别优化提取鱼皮明胶的酸法和酶法前处理工艺,并对所得明胶理化性质和成膜性能进行评价,探讨不同前处理方法对鱼皮明胶品质的影响。实验结果表明酶法提取所得明胶品质更好,酶解最佳工艺条件为:初始p H2.0、酶与底物比(w/w)0.004%、酶解30 min、提取温度50℃,提取时间1 h。在此基础上对明胶胶液的浓缩和干燥工艺进行优化,确定浓缩温度70℃、浓缩浓度20°Brix,热风干燥温度为40℃时可获得高性能且能耗低的明胶产品,为明胶的工业化生产提供理论依据。
In this study, silver carp processing by-products as raw materials for preparing skin gelatin, respectively, to optimize the extraction of gelatin and enzyme acid pre-treatment process, and the resulting gelatin physicochemical properties and film-forming properties were evaluated to explore different methods of pre-treatment skin gelatin quality. Experimental results showed that the resulting enzyme extracted gelatin better quality, optimum hydrolysis conditions were: initial pH2.0, enzyme substrate ratio(w/w) 0.004%, hydrolysis 30 min, extraction temperature 50 ℃, extraction time 1 h. On the basis of gelatin glue concentration and drying process optimization, to determine the concentration temperature 70 ℃, concentration concentrate 20 °Brix, hot air drying temperature was 40 ℃, available high performance andlow power consumption of gelatin products, gelatin provided a theoretical basis for industrial production.
