摘要
模拟花生仁仓储条件,以山苍子精油为熏蒸剂研究了山苍子精油用量、花生仁总量、花生仁水分对花生仁霉变率的影响,并对熏蒸参数进行了优化。结果表明:山苍子精油用量为180μL/L,花生仁总量为仓容的50%,花生仁水分为7.5%时防霉效果最佳,此条件下储藏20 d花生仁的霉变率为0.8%。经过山苍子精油熏蒸处理后的花生仁色泽气味、含油量、蛋白质含量等理化指标与熏蒸处理前相差不大,脂肪酸值略有上升,但各项指标均明显优于对照。
Simulated peanut kernel storage conditions, using litsea cubeba essential oil as a fumigant, the effection of dosage of litsea cubeba essential oil, amount and moisture of peanut kernel on mildew rate was studied, and the fumigation parameters was optimized. The results show that the best mould - proof condition is as follows, dosage of litsea cubeba essential oil 180 μL/L, amount of peanut kernel 50% of storage and moisture of peanut kernel 7.5%. Under the condition the mildewing rate is 0.8%. And after fumigation, the physical and chemical quality characters of peanut kernel as colour and odour, oil content, protein content, etc, are much better than the comparison, and don;t appeare to be much different from before.
