不同处理对高山茭白物流品质及贮藏特性的影响

摘要 以高山茭白为试验材料,经不同处理对茭白物流品质、损耗及贮藏生理特性进行研究。结果显示,随着物流时间延长,茭白品质下降,物流时间<12 h,损耗差异不显著,12 h后增加显著;不同采收期损耗率依次为早>中>晚;雨后采收或浸水损耗大于常规处理;茭白损耗率由原来的7.60%下降至4.25%,感官评分由原来的8.2分提高到9.6分;预冷对早期茭白、浸水茭白影响显著;随着贮藏时间延长,腐烂率增加,50 d前平缓,后期增加显著;可溶性固形物呈明显下降趋势,贮藏60 d后可溶性固形物趋于平衡,浸水茭白可溶性固形物含量最低。 The paper studies the quality, loss and physiological characteristics of Zizania caduciflora in different treatments.The results show that with the prolonging of the time, the quality of Zizania caduciflora decreased, the time of flow is less than 12 h,the difference of loss is not significant,and increased significantly after 12 h and the sensory score increase from8.2 to 9.6. The pre- cooling has a significant effect on early water bamboo shoot and wild rice stem. The water consumption of the wild rice stem is higher than that of the conventional treatment. The loss rate of Zizania caduciflora is reduced from 7.60%to 4.25%. The soluble solids content decrease significantly after storage for 50 days,and the soluble solids content reach the lowest level after 60 days storage. The soluble solids content of water- immerged wild rice stem(Zizania latifolia) is the lowest.
