摘要
为考察CO_2膨胀梗丝的使用价值,以传统高温、高湿(STS)膨胀工艺为对照,考察了CO_2膨胀工艺前后对烟草梗丝理化性质的变化。结果表明:①CO_2膨胀对梗丝的p H值及常规成分无显著影响;②CO_2膨胀后梗丝石油醚提取物含量有所降低,但与STS膨胀的影响相当;③CO_2膨胀对梗丝细胞壁物质的去除效果优于STS膨胀工艺;④CO_2膨胀梗丝的保润性能与感官品质优于STS膨胀梗丝。可见,与常规STS膨胀技术相比较,CO_2膨胀工艺能够在一定程度上改善烟草梗丝的品质,具有良好的应用前景。
In order to investigate the use value of stem shreds by CO2 expansion, their physicochemical characteristics are analyzed compared to stem shreds by STS expansion. Results show that:①CO2expansion has no significant effect on p H and routine components contents of stem shreds;②ether extract content of stem shreds by CO2 expansion decreased and the fall range is commensurate with that of STS expansion; ③CO2 expansion remove cell walls of stem shreds more efficiently than STS expansion; ④CO2 expansion improve moisture retention and sensory quantity of stem shreds compared with STS expansion. Overall,CO2 expansion can improve stem shreds qualities to some extent and has a bright prospect for production.
