摘要
以茶淀玫瑰香葡萄为研究对象,测定不同采收期葡萄果实中糖分组成及其他品质指标的相对含量,研究之间的相互关系。结果表明,茶淀玫瑰香葡萄果实中糖的积累以葡萄糖和果糖为主;进入缓慢生长期后,果糖含量升高的速率高于葡萄糖,二者的差距逐渐变大,葡萄糖与果糖的比值系数逐渐降低;葡萄果实中总酚、白藜芦醇的含量随着糖分的积累,总体呈下降趋势,进入浆果成熟期后,数值趋于稳定。
Taking muscat grape in Chadian as test material,the relative contents of carbohydrate compositions and other quality indexes in the grapes of different harvesting time were determined,and the relativity of which were studied. The results showed the carbohydrates of grape were mainly glucose and fructose;while the grape growth entered the slow growth period,the content of fructose increased higher than that of glucose,the gap between two carbohydrate was gradually larger,and the ratio of glucose and fructose decreased gradually;As the accumulation of carbohydrates, total phenols and resveratrol in grape was generally on a declining curve,the numerical value was stable while entering the maturity time of grape.
