萝卜及其芽苗中异硫氰酸酯分布研究

摘要 利用二乙胺滴定法和硫脲分光光度法测定并比较了萝卜及其芽苗各部位中异硫氰酸酯的含量。结果表明,萝卜及其芽苗不同部位中异硫氰酸酯的含量明显不同。萝卜从头到中到尾3个部位异硫氰酸酯的含量依次增大;萝卜尾部皮部中异硫氰酸酯含量要高于肉质部;萝卜芽苗叶中异硫氰酸酯的含量高于茎;二乙胺滴定法测定结果明显优于硫脲分光光度法。二乙胺滴定法和硫脲分光光度法测定萝卜及其芽苗中的异硫氰酸酯操作简单、成本低廉,结果理想。 The isothiocyanates contents in the different parts of radish and its sprout were determined and compared by diethylamine titration method and thiourea spectrophotometry. The results showed that there were obviously different isothiocyanates content in the different parts of radish and its sprou. The content of isothiocyanates in the three parts of radish were successively increased from head, middle to tail of radish. The content of isothiocyanates in the tail and skin were higher than that in the flesh part of radish. The content of isothiocyanate in sprout was higher than that in stem. The conclusion showed the diethylamine titration method was obviously superior to the thiourea spectrophotometry. The diethylamine titration method-thiourea spectrophotometry was simple, inexpensive and effective.
