摘要
蚕蛹虫草是中国特有的新资源食品之一,业已证明在抗肿瘤、提高免疫力等方面具有较好的功效,已形成产业化趋势,其干燥工艺尚未有系统性的研究报道。本研究基于本单位培育的蚕蛹虫草为研究材料,采用不同的处理温度和时间,检测蚕蛹虫草水分含量变化,有效成分虫草素和虫草多糖在处理过程中的损失,正交法处理数据。结果显示,虫草自然阴干后或含水率14%的蚕蛹虫草,在恒温干燥器中处理,在满足蚕蛹虫草样品含水率达标的前提下,即虫草产品含水率在10%以下时,70℃温度处理2 h处理条件下,有效成分虫草素含量损失最少,80℃温度处理2 h处理条件下,有效成分虫草多糖含量损失最少。本研究为蚕蛹虫草综合开发提供技术依据。
Cordyceps is one of the innovative resources of unique food in China consist versatile medicinal properties.It has showed the significant efficacy in anti-tumor and, enhanced the immunity as well.The present investigation is based on dry Cordyceps, its different processing temperatures and times, detection of changes in the moisture content, active ingredient, and polysaccharide losses during the processing of Cordyceps. Results of the study indicated that Cordyceps required optimum drying crafts by orthogonal treatment, as after dry naturally,there was 14% moisture content loss in Cordyceps recorded. Whereas, in a thermostatic chamber treatment, Cordyceps water samples meet the target rate under the premise that the Cordyceps product moisture content at 10% or less,at 70℃ treatment for 2 hours conditions, the loss of active ingredient Cordycepin least, and at 80℃ treatment for 2 hours conditions , the active ingredient of Cordyceps polysaccharide least loss.This study provides the technical basis for the comprehensive development of Cordyceps.
