摘要
从水牛乳中分离筛选优势乳酸菌并对其发酵液的抑菌特性进行研究,采用牛津杯法,通过18株(编号为SL001-SL018)乳酸菌发酵上清液对大肠杆菌及金黄色葡萄球菌的抑菌性能试验,最终而筛选出5株分别对大肠杆菌(SL001,SL003和SL009)和金黄色葡萄球菌(SL005,SL012)具较强抑菌活性的乳酸菌,其中SL003对大肠杆菌的抑菌圈直径达22.27 mm,SL005对金黄色葡萄球的抑菌圈直径达23.14 mm。通过革兰氏染色、菌落形态观察、过氧化氢酶试验征及16S r RNA序列分析,鉴定SL001,SL003为乳明串珠菌(Leuconostoc lactis),SL005,SL012为植物乳杆菌(Lactobacillus plantarum),SL009为食窦魏斯氏菌(Weissella cibaria)。试验对水牛乳中优良乳酸菌抑菌素的开发应用具有一定的启发及参考价值。
Screening advantages of lactic acid bacteria was isolated fxom buffalo milk and to study its antibacterial properties of fermented liquid, the Oxford cup method was adopted, through 18 strains (Numbers for SL001-SL018) on lactic acid bacteria fermentation supematant of Escherichia coli and Staphylococcus aureus Rosenhach antibacterial performance experiment, and finally select 5 strains ofE. coli respectively (SL001, SL003 and SL009) and Staphylococcus aureus (SL005, SL012) with inhibitor activity of lactic acid bacteria, including SL003 of E. coli bacteriostatic circle diameter of 22.27 mm, SL005 bacteriostatic ring of staphylococcus ball diameter of 23.14 nun. By gram staining, morphology observation, catalase test and 16S rRNA sequence analysis, identification SL003, SL001 were Leuconostoc lactis, SL005, SL012 were Lactobacillus plantarum, SL009 was Weissella cibaria. This test good lactic acid bacteria in buffalo milk to the development and application of antibacterial element had certain inspiration and reference value.
