摘要 以低价值植物油掺入高价值植物油的原则分别制作5种掺假植物油模型,结合植物油的脂肪酸含量变化,找到3种表征因子分别与其相应的低价值植物油掺入量呈良好的线性关系。结果表明:豆蔻酸(C14∶0)可作为棕榈油掺入菜籽油、大豆油、花生油的表征因子(相关系数为0.994 4,0.992 4,0.998 0),亚麻酸(C18∶3)可作为大豆油掺入花生油的表征因子(相关系数为0.999 8),亚油酸(C18∶2)与油酸(C18∶1)的比值可作为大豆油掺入菜籽油的表征因子(相关系数为0.997 3)。该方法确定了作为表征因子的脂肪酸含量和低价值植物油掺入量之间的线性关系,建立了二元植物油体系中低价值植物油掺混量的检测方法。 Five models were made on the principle of incorporating low - value vegetable oil into high - value vegetable oil, and three characterization factors were found through the variation of fatty acid content which showed good linear relationship with the proportion of low - value vegetable oil. The results showed that myristic acid( C14: 0) could be used as the characterization factor of incorporating palm oil into rapeseed oil, soybean oil or peanut oil ( the correlation coefficient was 0.994 4,0. 992 4,0. 998 0 respectively) ; linolenic acid( C18:3 ) could be used as the characterization factor of incorporating soybean oil into peanut oil( the correlation coefficient was 0. 999 8 ), the ratio of linoleic acid ( C18 : 2 ) to oleic oil ( C18:1 ) could be used as the characterization factor of incorporating soybean oil into rapeseed oil( the correlation coefficient was 0.997 3 ). The linear relationship between the characterization factor of fatty acid content and the proportion of low - value vegetable oil was determined, and the identification method for proportion of low - value oil in binary vegetable oil system was established.
