人人皆知重庆火锅出名,而只有本地人知道重庆的毛哥老鸭汤也是巴渝一绝,其主要由老鸭子和陈年酸萝卜烹制而成。为了不让酸萝卜的酸味影响汤的美味,因此,汤中还加入了大骨熬制的高汤,老鸭在汤中用小火熬煮至少两个小时,至汤白鸭香时再放入鸡精、味精、葱段,带火上桌。
