摘要
植物产生种类繁多的小分子代谢物,包括人体所必需的维生素、促进健康的特殊营养成分、阻碍营养吸收的抗营养因子以及具有药用价值的化合物。作物中这些代谢物构成了特殊营养品质,其组成和含量在不同物种、不同品种间差异很大。植物代谢与代谢组学的研究可以加深我们对特殊营养品质形成机理的认识,促进营养科学包括营养遗传学和营养基因组学的研究,为定制个性化食谱、满足于不同人群的营养需求铺平道路。
Plants produce a huge variety of small-molecule chemicals, including those function as human nutrients and functional compounds for diseases control and pre-vention, as well as antinutrition compounds. They vary greatly among different species and cultivars, and con-stitute the plant specialized nutrition quality. Resear-ches in plant metabolism and metabolomics not only in-crease our knowledge in plant sciences and synthetic bi-ology, but also help to improve human health and pave the way for providing personalized diet.
