摘要
徽州菜馆作为徽商的一个代表性产业,从寂寂无闻的地方小吃发展为驰名天下的一大菜系,与其较为完善的经营与管理手段息息相关,其成功之处在于用人制度完善、财务管理严谨、技能培训到位、营销手段成熟等。徽州菜馆的经验对当下重振徽菜和打开市场具有重要的参考价值。
As a representative industry of Hui merchants, Huizhou restaurants, being world-famous for Hui style of cooking, evolved from obscure local snack bars, which is closely related to their relatively perfect operation and management methods. These include perfect personnel system, strict financial regulation, successful skill training and mature marketing methods, which is of great reference value for opening the market and revitalizing Hui cuisine.
