摘要
葡萄皮渣中含有抗氧化性的多酚类物质,具有很高的营养价值和利用价值,但是在我国的葡萄加工生产中,葡萄皮的利用率却不高。采用超声波辅助法对葡萄皮渣中的多酚进行提取,探讨了料液比、乙醇浓度、p H值、萃取时间、温度以及超声频率等因素对多酚提取率的影响,并通过响应面实验确定了最佳工艺参数为:料液比1∶10、乙醇浓度40%、超声波处理时间30min、萃取温度40℃、p H6、超声频率45KHz,在此条件下提取的葡萄皮渣中多酚含量可达17.79mg/g。实验建立的超声波辅助法可高效提取葡萄皮渣中多酚类物质,对充分利用葡萄资源具有实践指导意义。
The grape skin is rich in polyphenol, which has strong anti-oxidative capacity and nutritional value. However, most of the grape skin has been wasted. Ultrasonic-assisted method was used to extract the polyphenols in grape skin residue and the ratio of material to liquid, extraction time, ethanol concentration, pH value, temperature, ultrasonic frequency and other factors were considered in order to obtain high extraction yield of polyphenol in grape skin residue. According to the results of the response surface experiments, the optimum process parameters were : 1 : 10 as the ratio of material to liquid, 40% aqueous ethanol, extracting 30rain at 40℃, pH 6 and the ultrasonic frequency 45 KHz. This optimized condition resulted in a yield of 17.79 mg/g polyphenols in grape skin residue. In this paper, ultrasonic-assisted method was established and the results may have great importance in future usage of grapes.
