摘要
[目的]对市场常见13种蔬菜中的可溶性膳食纤维、不溶性膳食纤维和总膳食纤维进行测定。[方法]采用三维滤袋技术法测定多种蔬菜中膳食纤维含量。[结果]样品中可溶性膳食纤维的含量均高于不溶性膳食纤维的含量;可溶性膳食纤维含量以胡萝卜中最高,茄子次之;不溶性膳食纤维含量以莲藕中最高,胡萝卜、南瓜、茄子、豇豆中含量均超过2%;总膳食纤维的含量以莲藕最高,南瓜和胡萝卜紧随其后;因含水量高,黄瓜、冬瓜、西红柿、白菜中膳食纤维含量较低。[结论]研究结果为蔬菜中膳食纤维含量测定提供了借鉴。
[Objective] The soluble, insoluble and total dietary fiber in thirteen kinds of common vegetables were determined. [Methodl The dietary fiber contents of a variety of vegetables by Three dimension (3D) filter bag method. [Result] The IDF's content in the samples were higher than the content of SDF. Carrots had the highest SDF content, eggplant followed. Iotus root had the highest IDF content. The IDF content of carrots, pumpkins, eggplant, cowpea were more than 2%. Iotus root had the highest TDF content, pumpkin and carrot followed suit. Due to high water content, cucumber, wax gourd, tomato, cabbage had the lower dietary fiber content than others. [Conclusion] The results provided references for determination of soluble, insoluble and total dietary fiber vegetables.
