摘要 影响白酒酿造的主要生态环境因素有土壤、水质、温度、湿度及其变化。从扳倒井所处的生态环境出发,探讨了主要环境生态因子对酿酒、制曲的影响,为酿酒工艺的制定提供了依据。对酿酒行业工艺的选择具有一定的指导意义。 The ecological environmental factors influencing liquor production mainly include soil, water quality, temperature, humidity and their changes. In this study, based on the ecological environment conditions of Bandaojing liquor, the effects of environmental factors on liquor-making and starter-making were analyzed, which provided scientific evidence for liquor-making. This study is of guiding significance in the selection of liquor-making technology.
