摘要 [目的]为宁夏南部山区栽培玛咖的质量进行评价和开发利用提供参考依据。[方法]对宁夏南部山区种植的玛咖营养成分进行了分析,并与文献报道的秘鲁和云南产地玛咖进行了比较。[结果]宁夏南部山区玛咖所含营养成分的种类与秘鲁和云南产地玛咖一致,其中对人体有益的蛋白质、膳食纤维、钙、磷、铁、锌、氨基酸、玛咖烯、甾醇、总皂苷和芥子油苷等成分的含量较高,特别以蛋白质、膳食纤维、脯氨酸、精氨酸、甾醇和芥子油苷突出,平均含量分别为17.95%、17.34%、6.53%、2.39%、0.748 6mg·kg-1和2.63%。[结论]宁夏南部山区种植玛咖的营养丰富,具有开发利用价值。 [Objective]For the quality of the southern mountains of ningxia cultivated maca evaluation and provides some references for the development and utilization. [Methods]In this paper, the ningxia south mountainous planting of maca nutrients were analyzed, and compared with literature reports of Peru and yunnan origin maca. [Results]The results showed that: the nutrients of Ningxia south mountainous maca contained were in line with Peru and yunnan origin maca, which was beneficial to human body protein, dietary fiber, calcium, phosphorus, iron, zinc, amino acids, maca olefinic glucosinolates, sterol, total saponins and composition such as the content was higher, especially in protein, di- etary fiber, proline, arginine, sterol glucosinolates and outstanding, the average content of 17.95 %. 17.34 % .6.53%. 2.39% ,0. 748 6 mg.kg-1 and 2.63%. [Conclusion]The nutritions of Ningxia south mountainous planting maca are rich, has the development and utilization value.
