摘要
研究不同来源和纯度的硫酸软骨素的吸水性、保水性、吸油性、起泡性和持泡率等理化特性,结果表明硫酸软骨素吸水性和保水性均低于甘油,但甘油吸水性太强,易造成返吸现象。不同湿度下,鸡硫酸软骨素的吸水性和保水性综合表现最优;粗品的吸油性与酪蛋白相当,高纯品吸油性为酪蛋白的2倍,其中鲟鱼硫酸软骨素最佳;起泡性均低于蛋清,但起泡性及持泡性最佳的是鲟鱼硫酸软骨素高纯品。因此,硫酸软骨素可广泛应用于低泡饮料、肉制品、代脂食品、化妆品等产品中,能增强产品的保健功能和加工适性。
Different sources and purity of chondroitin sulfate, water retention, water imbibition oil absorption, foaming ability and foam rate such as the physical and chemical properties were studied. The results showed that chondroitin sulfate water absorption and water retention were bellowed than glycerol,but glycerol absorbent was too strong, easy to cause back suction phenomenon. Under different humidity, water absorption and water retention of chicken chondroitin sulfate performed best.Sturgeon chondroitin sulfate was best with casein crude product of oil absorption, high tasted oil-absorbing for 2 times the size of casein. The chondroitin sulfate high sturgeon was best with good foaming and keeping bubble feature, its blister bellowed egg whites. Therefore, chondroitin sulfate can be widely used in low foam drinks, meat, fat food, cosmetics and other products, can strengthen the health care function of the product and processing eligibility.
