The effect of water activity on acyl migration during the production of structured lipids containing conjugated linoleic acid

摘要 北京市粮食科学研究院成立于1973年,前身为北京市属科研院所。2000年12月转制为科技开发型企业。作为从事粮油食品科技开发的专业机构,先后承担、参与完成了100多项科研项目以及300多项技术服务,多次获国家及北京市科技进步奖,申请及获得中国专利多项,是国内粮油食品行业知名院所。发展理念:立足需求分享成果合作共赢。研究方向:粮油食品与营养粮油加工与可持续发展粮油食品安全与防范粮油产业升级与转型。技术支持:粮油食品质量安全指标检测与监测(生物毒素、农药残留、重金属、 Structured lipids containing CLA and PLA at sn-2 position was synthesized catalyzed by Lipozyme TLIM, where the effect of water activity on CLA incorporation and acyl migration were studied. At the range of water activity of 0.22-0.80, CLA incorporation into triacylglycerol of pine seed oil increased as the water activity increased, while the degree of acyl migration also increased. However, when we studied the relationship of the degree of acyl migration and total CLA incorporation, we found that at the certain degree of acyl migration (i. e. 0.6) more CLA was incorporated in the higher water activity system rather than lower water activity system. Results indicated that it is better to increase water activity and reduce reaction time for inhibition of acyl migration, or vise versa. In this paper, we synthesized the structured lipid at the condition of 10% of Lipozyme TLIM catalyzed pine seed oil and CLA at the weight ratio of 4:1 under water activity of 0.65 for 6 h at 60℃. The strctured lipid composed of 10.1% of the CLA and 15.17% of PLA, in which 7.41% of CLA and 9.29% of PLA were esterfied at sn-2 position.
