摘要
豆清液是豆制品生产过程中的副产物,由于其含有丰富的蛋白质、脂肪、糖类及有机酸等营养物质,化学需氧量较高,直接排放不仅造成资源浪费还严重污染环境,不利于清洁生产和增加大豆加工的附加值。就目前国内外有关豆清液的营养成分、发酵生产、提取功能性成分、生产饮料、菌株的筛选等综合利用方面的研究进展进行综述,为其综合利用提供思路。
Soybean processing wastewater is a by-product during the productive process of soybean products.It can waste resources and heavily pollute environment at the same time if discharge it directly ,because it is rich in protien ,fat,sugar,organic acids or other nutrients and it has high chemical oxygen demand.It is not conducive to cleaner production and increase the added value of soybean processing as well.The current research progress on comprehensive utilization of soybean processing wastewater at home and abroad were summarized in this paper, mainly including nutritional ingredients ,fermentation production,extraction of functional components,beverage production and selection of strains,to provide ideas for its comprehensive utilization.
