摘要
为研究以海藻酸钠和脱脂乳为混合壁材对植物乳杆菌A409微囊化后在动物消化道中的稳定性,本实验用不同浓度胆盐、人工胃液、人工肠液处理微囊化植物乳杆菌样品,测定不同处理时间的存活率。结果表明:(1)本研究所用微囊化植物乳杆菌样品具有良好的耐酸性能,用pH2.5及pH3.5的人工胃液处理2h,存活率均在80%以上;处理3h。pH3.5的仍在80%以上;(2)用0.1%~0.5%浓度的胆盐溶液处理微囊化植物乳杆菌样品2h后仍有较高存活率(80%以上),3h后存活率降至65.6%~82.8%;(3)微囊化植物乳杆菌经人工肠液处理,在0—8h内有较好的耐受性(85%以上),8h以后存活率下降速度较快。海藻酸钠与脱脂乳做混合壁材的微囊化植物乳杆菌对酸性条件、胆盐、人工胃液、人工肠液均有较高的耐受性,在动物胃肠道中稳定性良好。
The study used sodium alginate and skim milk as mixed cliff material on the stability of microencapsulation Lactobacillus plantarum A409, this experiment used different concentration of bile salt, artificial gastric and intestinal juice processing microcapsulation Lactobacillus plantarum and detected the survival rate in different treatment time. The results showed that: (1) Microcapsulation Lactobacillus plantarum sample had good acid resistance, by pH 2.5 and pH3.5 artificial gastric juice treating 2h, the survival rate was above 80% ; by pH 3.5 artificial gastric juice treating 3h, the survival rate was still more than 80%. (2) Microcapsulation Lactobacillus plantarum sample was treated 2 hours with 0.1%- 0.5% concentration bile salts, they still had higher survival rate ( more than 80% ), the survival rate by treating 3 hours reduced to 65.6- 82.8%. (3) Microcapsulation Lactobacillus plantarum was treated by artificial intestinal juice, it had better tolerance in 0~ 8h (more than 85%) , the 8 hours. Microcapsulation Lactobacillus plantarum with sodium survival rate decreased faster after alginate and skim milk as mixed cliff material had higher tolerance to acid, bile salt, artificial gastric and intestinal juice, and had good stability in animal gastrointestinal tract.
