摘要
鸡蛋作为一种大众消费品,其质量会直接影响消费者的营养素摄入及健康,然而我国目前尚缺少鸡蛋标准。鸡蛋的质量反映在其营养价值、外观质量、安全质量和口感质量等方面。作者综述了这4方面的质量指标组成以及影响质量指标的因素,为改进鸡蛋的质量提供了依据。
Eggs as a mass consumer product, its quality will directly affect nutrient intake and health of consumers, however, our country is still lack of egg quality standards. The quality of the egg is reflected in its nutritional value, appearance, security and taste, and so on. The author summarizes the composition and the effect factors of these four aspects of quality indicators, to providing a basis of improving the quality of eggs.
