摘要
目的对一起学校食堂细菌性食物中毒案例进行调查研究,了解食物中毒的过程以及原因。方法对学校食堂细菌性食物中毒案例的现场流行学、病例个案等进行调查,并对剩余的食物以及呕吐物进行实验室检查,对检验的结果进行研究分析。结果学校食堂细菌性食物中毒案例中患者的主要症状为恶心、呕吐、腹泻、发烧等,患者均在同一窗口就餐,其他窗口就餐学生均未出现食物中毒的情况。实验室检查患者的呕吐物以及剩余食物,结果肠毒素为阳性,伴有大量金黄色葡萄球菌。结论导致这起学校食堂细菌性食物中毒案例发生原因主要是食物被金黄色葡萄球菌污染,食堂工作人员对食物卫生的意识情况较差,未能对食物妥善进行处理,使得食物出现细菌大量繁殖的情况。
Objective To investigate a case of bacterial food poisoning in a school cafeteria,and to understand the process and causes of food poisoning. Methods The epidemiological investigation and case study of bacterial food poisoning in school canteens were carried out. And the rest of the food and vomit for laboratory testing,the results of the study were analyzed. Results The main symptoms of patients with bacterial food poisoning were nausea,vomiting,diarrhea,fever and so on. The patients were all in the same window,the other windows of the students did not appeared food poisoning. Laboratory tests for patients with vomiting and residual food,the enterotoxin was positive,with a large number of staphylococcus aureus. ConclusionThe main cause of this case is that the food is contaminated by staphylococcus aureus. Canteen staff awareness of food hygiene is poor,failed to properly deal with food,so tha a large number of bacteria multiply in food.
