摘要
以东北小花生米为主要原料,以花生浆蛋白提取率为指标,通过正交试验确定最佳酶解工艺为Protamex TM酶添加量0.030%,酶解温度55℃,酶解时间0.5 h,花生浆蛋白提取率可达到74.62%。
This study selects peanuts slurry as the main raw material, extraction rate as index. Peanut slurry of enzymatic hydrolysis is determined by the orthogonal test are as follows: with enzyme ProtamexTM amount 0.030% , time 0.5 h, digestion temperature 55 ℃, protein extraction rate of peanut slurry can retch to 74.62%.
