摘要
荞麦是一种集营养与保健为一体的粮食作物,营养丰富、蛋白质含量较高,是优良的荞麦蛋白肽来源。通过综述国内外近年来对荞麦活性肽的制备、分离纯化、结构鉴定和生物活性的研究,展望了荞麦活性肽的应用前景,以期为荞麦活性肽的研发和利用提供参考。
Buckwheat is the important crops with effect of nutrition and health. It is nutrient-rich, and there are much proteins which is a good source of buckwheat peptides. This paper reviews the preparation, purification, structure and biological activity of buckwheat bioactive peptides and discussed its further research development, aims to provide the references for the related research.
