摘要 高校餐饮落实新《食品安全法》存在着决策者不够重视、投资不足、管理人员短缺、执法不严和从业人员素质低的问题,主要原因是管理者认识不到位、法制观念淡漠、追求经济利益和信心不足等。要改变现状,把新《食品安全法》贯彻好落实好,就必须从高校一把手抓起、强化执法力度、增加餐厅投入、引进培养人才、实行许可证制度、制定餐厅建设标准和鼓励师生监督,这是高校增强综合实力、提高餐饮服务和食品安全水平的保证。 There are many problems in the implementation of new "food safety law" in the university catering, such as shortage of decision makers enough attention to the problem, insufficient investment, shortage of management personnel,strict law enforcement and low quality of employees. The main reasons are lack of sufficient awareness, the legal concepts,and confidence and the pursuit of economic interests, etc. To change the status quo and implement the new "food safety law", it is necessary for the college leaders to strengthen the law enforcement, increase the restaurant's investment, introduce and cultivate talents, implement the permit system, formulate the construction standards of the restaurant and encourage teachers and students to supervise. This is the assurance of universities to improve comprehensive strength and the level of food and beverage services and food safety.
