三种不同包衣材料对五种益生菌保存期的研究

摘要 益生菌有益于机体健康,但在生产、保存过程中其活性常会降低;而包衣材料可以提高益生菌的稳定性,从而更好地使其发挥益生作用。试验通过平板计数法来评价3种包衣材料对5种不同益生菌(粪肠球菌、双歧杆菌、酵母菌、芽孢杆菌、乳酸菌)的保护作用。结果表明,3种包衣材料对粪肠球菌、乳酸杆菌、双歧杆菌、酵母菌和芽孢杆菌均有一定保护作用,其中,20 d内,包衣材料2对5种益生菌的保护作用较强;60 d内,则是包衣材料1对5种益生菌的保护作用较强。 Probiotics can promote the health of the body, but they will reduce the activity in the process of production and preservation. The coating material can improve the stability of the probiotics, and thus better play its prebiotic effect. In this study, the protective effect of three coating materials on five probiotics (Enterococcus faecalis, Bifidobacterium, yeasts, Bacillus, Lactobacillus) was evaluated by plate counting method. The results showed that three kinds of coating materials had some protective effects on Enterococcus faecalis, Lactobacillus, Bifidobacterium, Saccharomyces and Bacillus. In 20 days, the protective effect of coating 2 on five probiotics was stronger; within 60 days, the protective effect of coating 1 on five probiotics was stronger.
