2015年商丘市梁园区农村集体聚餐现状分析

摘要 目的积极响应国家食品安全社会共制方针,了解农村基层食品安全状况,预防和控制食物中毒等食源性疾病的发生。方法对商丘市梁园区共8个乡镇8个办事处其中(2个涉农)农村集体聚餐现状进行调查。结果农村集体聚餐以家庭式为主,无监管措施,所购食品原料主要在农贸市场且没有索票,餐具未消毒,从业人员文化程度低且未健康体检和培训。结论加强乡镇(社区)食品安全管理机构和乡镇(街道)食品安全协管员、村(社区)食品安全信息员队伍,履行农村集体聚餐备案义务。建立厨师登记管理制度、建立农村集体聚餐分类全程指导制度,逐步形成"事前有申报、过程有监管、事后可追溯"的农村集体聚餐食品安全管理工作机制,有效预防食源性疾病的发生。 Objective To actively respond to the national food safety policy, to understand the situation of food safety in rural areas, to prevent and control the occurrence of food poisoning and other food borne diseases.Methods To held a forum survey about food security situation to investigation of the rural collective dinner in eight villages and eight offices (two agricultural ) in Liangyuan district of Shangqiu. Results Rural collective dinner with family-oriented has non-regulatory measures, The main raw material purchase food at the farmers market and no invoices, tableware of unsterilized, Low educational level of employees and no health examination and training. Conclusions Strengthening township (community) food safety regulatory agencies and township (street) food safety coordinators,Village (community) food safety team information,Clear Township Food Safety Coordinators and village food safety information division of responsibilities, grasp the information collection of rural collective dinner, urge the sponsors, organizers timely record. Clear party organizers, the contractor bear the main responsibility for food safety, should conscientiously fulfill the obligations of the rural collective dinner for the record. Rural collective dinner chef must receive annual training knowledge of food safety and health examination, obtain certification before engaging in rural collective dining catering service work. Establishment of rural collective dinner the entire classification guidance system, the purchase of raw materials, eating places, food refrigeration and tableware disinfection process full supervision and guidance, and gradually form a "pre declaration, process supervision, after the traceability" rural group dinner food safety management mechanism, and effectively prevent the occurrence of food borne diseases.
