摘要
研究了红曲大规模培养产生生理活性物质的方法及定性、定量测定该活性物质的方法,其中以Monascus.ru-ber为菌种,用新鲜的粳米及添加一定的麸皮为固体发酵培养基,采用二级放大培养,用大三角瓶及大盘作发酵容器,获得纯红曲制品,在大规模固态发酵培养过程中应注意的事项,同时采用建立无菌净化间进行大规模红曲培养的可行性的研究。
This article mainly introduced the studies of production of monacolin K with scale solid state fermentation of Monascus ru-ber,and the determine method of monacolin K.In Monascus ruber culture,the solid culture medium was made of plump rice and bran with two step culture,then used the triangular flask and big plate as the ferment ation containers,and15days culture at28℃,and fi-nally the end product is red koji.The points for attention of culture solid state fermentation of Monascus ruber and the aseptic work-shop for solid state fermentation of Monascus ruber were described in this article.
