安琪酒用酵母在小烧白酒生产中独领风骚

摘要 分别对A,B,C,D及安琪5个品牌的酒用酵母进行性能检测和生产试验,结果安琪酒用酵母较其他酵母含水量低,<5%;细胞成活率高,>80%;且各批次质量参数基本相同;出酒率高20%;己酸乙酯含量高30%;试验成品酒口感较用其他酵母发酵试验成品酒好。(孙悟) The property detection and production tests of A,B,C,D and Angel AADY were carried out respectively.The results indicated that compared with other yeasts,Angel AADY had lower water content (<5%)and higher cell survival rate(>80%);In addition,the quality parameters remained the same for each batch of Angel AADY and its application could result in the liquor yield high er by20%than others;the content of ethyl caproate higher by30%;Furthermore,the test product liquor tasted better than test liquors fer-mented by other yeast.(Tran.by YUE Yang)
